Who Am I?
Hey everyone, my name is Meredith Beach and I am a 22 year old chick living in Knoxville, TN. I live with my dog child Owen and my partner in life and love Brad. I enjoy drinking coffee and wine, all day everyday, eating everything that's delicious and from Trader Joes, and telling people I'm gonna work out after work, even thought everyone knows it's a lie. I'm a native of the Washington D.C. Metropolitan area but am learning to love this wonderfully southern state of country music, mountains, and bbq. Brad and I are avid watchers of food network and other various Netflix comedies, and dream of opening a food truck that serves only avocado, called "Steet Side Guac".
A recent college graduate, now entering the work force, I recognize a real struggle for many, trying to live a busy lifestyle and maintain a healthy and balanced diet, especially with health problems. With e recent diagnosis of endometriosis, I have had to make a large lifestyle change, but I sought a way to make it fun and delicious. My blog focuses on dietary advice, recipes for both food and drinks, travel recommendations for good eats, great restaurant reviews and recommendations for those with dietary restrictions, and my personal journey with endometriosis.
Why Am I Writing this?
After years of struggling with food intolerance and digestive troubles, periods comparable to the blood in the elevator scene from The Shining, extreme pain, and a growing hatred for my body and womanhood, I was finally diagnosed with Endometriosis though a laparoscopic procedure. This shit literally built a new life all over my other organs like this was the westward expansion, not okay. What have I been up to since then? Most likely all the same things you deal with everyday, still hating my body, not being able to eat anything, loving my heating pad more than my boyfriend, crying at everything (but being sure to tell everyone you're taking a shit ton of hormones and that's why), carrying midol with me everywhere, and acting uncharacteristicly like a raging bitch. But thanks to a support (and very healthy) mother, and the copious amounts of information I have found while searching the Internet, usually at 3 a.m. while laying on the floor with my heating pad, I have found a way to feel better through food. On this ever evolving blog, i'm going to take you through my life and love of food while I experiment with products and recipes to find the most endo friendly diet. What Are We Eating?
Here's a list of recommended good eats, follow this list however you want, these are all just feel good body foods.

6. Organic Fish
And how could we have good if there wasn't any bad. Will these foods kill you? Probably not, but they may cause abdominal pain and bloating if not eaten in moderation, or eliminated from your diet altogether.

5. Caffeine -- Tea, Coffee, and Alcohol
6. Fried Foods
7. Manufactured Soy
8. Frozen Food
9. Manufactured Meat Products
