Brad and I have had a busy month of August and beginning of September between moving into our new apartment, getting engaged, and starting my new job. Unfortunately I haven't had a ton of time to blog new things but I am so excited to finally be able to show you what i've been able to cook in our new kitchen. This weekend, while gearing up to watch the Vols play, I had the chance to make a delicious and healthy skillet dinner.
This dinner was easy and perfect for those who don't eat meat, but eat seafood. This dish was perfectly flavorful and spicy and made for a fun summer seafood pasta meal. To make this plate, you will need the following ingredients:
1/3 cup of olive oil
1/4 cup grated Parmesan cheese
4 cloves of garlic, minced
1 tablespoon of brown sugar
2 tablespoons of soy sauce
1/2 teaspoon red pepper flakes (or more if you like the heat)
1 pound of medium shrimp peeled
8 ounces of pasta (I used bowtie for mine)
Salt and Pepper to taste
I/2 green onion diced

The thing to know about this shrimp pasta is that there is a little bit of prep work involved. You'll want the shrimp to marinate for at least 30 minutes before cooking it. The marinate was as easy of combining the olive oil, Parmesan cheese, garlic, brown sugar, soy sauce, and red pepper flakes. I whisked these ingredients together to ensure the brown sugar and cheese had dissolved into the liquid. Earlier in the morning, I picked up a pound of shrimp from the fish counter at my local grocery store so that I knew it was fresh. To prepare them, I just had to take the tails off and threw those puppies into the marinate.
I cooked the pasta according to the instructions on the package, in a large pot of water with salt added to taste. Once that has finished cooking, I drained the water and set it aside to add to the skillet later, which I had heating up on medium high heat on the next burner. In the skillet, I added the shrimp and marinate and cooked it until it was pink. Once the shrimp was cooked, I added the pasta and stirred together. I seasoned it with salt and pepper to taste and topped it off with a garnish of Parmesan cheese and green onions.
This dinner took about 15minutes to prepare after a 30 prep time. This makes for great leftovers and I enjoyed packing it for lunch to eat at work. It tastes great reheated or even as a cold pasta salad. And for those who love to experiment with their recipes, I encourage you to add your favorite type of seafood or chicken.
