The Paleo Diet, or the caveman diet, is the ultimate guide for eating natural, clean, and fresh. His diet puts an emphasis on eating meats, fish, and vegetables. It also allows you to enjoy fruits, nuts, and seeds in moderation. As scary and restricting as it sounds, it's actually a lot easier to prepare and plate than one would guess, so tonight I decided to give it a try!
Ingredients I used that follow the Paleo Diet:
1. Salmon Filet
2. Olive Oil
3. 2-3 Zucchini
4. 1 Lemon
I also used assorted seasonings for flavor purposes but I used them sparingly. I encourage you to use what seasonings you prefer on fish and veggies, for me that was just the basic salt and pepper.
If you're anything like me, you don't want to spend an hour making dinner after work when you have tons of things to catch up on in the evening, especially those dreaded workouts. This was such a simple and easy meal to prepare because it was quick and didn't require a ton of ingredients. This dish took maybe 30 minutes to make and was the perfect meal after a trip to the gym.
First, chop up the zucchini into one inch pieces, you want them to fit nicely in one layer on the pan and cook evenly once you start to Sauté them. I tossed those into the pan with about 2 teaspoons of olive oil. I also sliced up one lemon and put about 3 pieces into that pan as well to add a little bit of a citrus flavor to the zucchini.

Once you get those going on the pan, keep them cooking on medium to high heat, occasionally giving them a stir to get them evenly cooked and browned. Season the salmon to your liking, for me that was with a little salt and pepper. I did that to both sides before putting it in a pan with a tablespoon of olive oil on medium heat. I placed the three remaining lemon slices on top to give that salmon a citrus kick as well. I start with the skin side down, just to get a nice crisp edge to it. Depending on the thickness of your salmon, it should cook for about 8 minutes. Turn your salmon over when you can see that it's cooked about half way through. Once the salmon has turned from a bright pink color to a pale pink you know it's about finished.
When both the zucchini and the salmon are perfectly cooked, they are ready to eat and enjoy! Fish and vegetables are something I try to incorporate into my diet a lot because of the nutrition that they offer but also the great flavors that you can add to both, depending on your palate preferences. This dish in particularly offers a light and fresh lemony zest with the crisp texture of the outer coating on the zucchini and salmon. It really brings out all the flavors of summer. This dinner was super easy for me. I was able to come home from work, go to the gym, and get dinner on the table all before The Bachelorette came on at 8 p.m. After eating, I feel perfectly full and my appetite is satisfied. I love that even on busy evenings after work that I can whip up something healthy for dinner without sacrificing a ton of time and money.
